
If you’re anything like me, you probably have a handful of go-to dinners on repeat—stir fry, fish night, taco night… But sometimes, even the best routines need a little shake-up. Enter: Speedy Garlic Prawn Fettuccine.
I love cooking, but after a full day of work, training (sometimes twice!), and everything else life throws at me, I don’t want to spend an hour in the kitchen. I still want something packed with flavour, though—because let’s be real, I’m not the type to settle for an omelette or toast for dinner.
This recipe actually came about by accident. I went to grab my usual fish for dinner, only to find the supermarket had completely run out of barramundi. Salmon? Not in the mood—I’d already had it for lunch and dinner earlier in the week. My only option? Garlic prawns. So, I rolled with it, and now, this dish has officially earned a spot in my weekly lineup. Hopefully, it makes it into yours too!
Ingredients:
250g marinated garlic prawns
2-3 garlic cloves
1/2 onion
250g punnet cherry tomatoes
1 small head of broccoli
1/2 bunch of parsley
3 tbsp extra virgin olive oil
150g egg fettuccine
Steps:
1. Start by preparing the vegetables. Crush and dice the garlic, dice the onion, roughly chop the head of broccoli, and slice the cherry tomatoes in halves.
2. Heat a non-stick medium pan to a medium/high heat setting. Add a tablespoon of oil, onion, and garlic. Stir for 1-2 minutes.
3. Add the prawns, broccoli, and tomatoes. Stir for 2-3 minutes to create some golden brown colouring and then cover with a lid to steam the broccoli.
4. Leave covered for 5-8 minutes, occasionally lifting the lid and stirring.
5. In the meantime, cook the pasta according to instructions.
6. Remove the sauce from the heat when the tomatoes become jammy. Add the extra olive oil, parsley, and season with salt and pepper.
7. Split the pasta between 2 bowls, top with the garlic prawn sauce, and enjoy!
