Ingredients
1 cup of wholemeal flour
1/2 cup dessicated coconut
1/3 cup of sugar or syrup
1/2 tsp each of bicarb soda + baking powder + salt
1/2 cup of butter or coconut oil, melted
1/3 cup of Greek yoghurt
4 tbsp of cocoa or cacao powder
2 eggs
1 1/2 – 2 cups of leftover (cooked) porridge
1 tsp vanilla
1/4 cup dark choc chips
This cake could easily be adapted with other flavour combos that you may have on hand:
- Mocha: Remove the coconut and add in 1-2tsp of instant coffee powder OR
- Vanilla Coconut & Berry: Remove the chocolate chips and cocoa and replace with 1 cup of berries
- Choc Walnut: Add in 1/2 cup of chopped walnuts to the mix when adding the choc chips
Instructions
- Preheat oven to 180deg and grease a cake or loaf pan.
- In a large mixing bowl, add the melted butter/coconut oil, sugar, yoghurt and cocoa. Whisk well until the sugar has dissolved.
- Next, add in the eggs, porridge and vanilla – whisk until well combined.
- Gently fold in the remaining dry ingredients – flour, coconut, bicarb, baking powder and salt – until just combined.
- Lastly, add in the flavour additions of your choosing, such as choc chips.
- Pour the mix into your baking dish and bake for 45-60 mins or until a skewer comes out clean when inserted into the middle.
- Lick the bowl while cake is baking.
- Enjoy your cake warm or cold!
Thermomix Instructions

- Place butter or coconut in thermie jug and melt 2 min / 100deg / sp 2.
- Add in the sugar, yoghurt and cocoa. Whisk well for 1 min / sp 3.
- Next, add the eggs, porridge and vanilla. Combine for 30 secs / sp 3-4 / reverse.
- Add in flour, coconut, bicarb, baking powder and salt. Combine briefly for 10 secs / sp 4 / reverse (or until all dry ingredients are moistened).
- Lastly, manually stir through the choc chips and/or berries and/or nuts.
- Pour the mix into your baking dish and bake for 45-60 mins or until a skewer comes out clean when inserted into the middle.
- Lick the bowl while cake is baking.
- Enjoy your cake warm or cold!
